Muffins from breakfast raisin bran cereal
My husband got hooked on bran muffins he bought in our local grocery store. The price of four muffins started rising and got to a point where it was too expensive to buy them on our limited income.
We decided to try making them ourselves at home. I remembered that my daughter had made some from cereal when we lived in Virginia. So, I started searching on line for a recipe similar to what she used. It was a Post Raisin Bran cereal recipe. I came across one and just did some changes to suit us.
They are delicious. I usually make a double batch.
Post Raisin Bran Muffins Ingredients
1 1/4 c Flour
1/2 c Applesauce
1 tb Baking powder
1/3 c Brown sugar; packed
1/4 ts Salt
2 tb Margarine; melted
2 c POST raisin bran cereal
1/3 c Dried apricots; chopped,
1 c Skim milk
Cinnamon sugar; (*optional,
1 Egg; slightly beaten
Instructions for Post Raisin Bran Muffins
Heat oven to 400 (375 if you are making extra large muffins, as I do).
Mix flour, baking powder, and salt in a large bowl.
Mix cereal and milk in a separate bowl and let stand 3 minutes.
Add to the cereal and milk, the egg, applesauce, sugar and margarine.
Add to flour mix, with the apricots if you are using them, and stir
until just moistened. Pour into sprayed muffin pan, (sprinkle with
cinnamon-sugar, if desired) and bake 20 minutes until golden. Makes 12.
NOTE, if you like the extra large (Texas-sized ) muffins like I do, bake at 375,
for 20-30 minutes (closer to 30, but check at 20). Makes 6

I'm a fan of everything homemade - including homemade muffins! Of course, I can easily buy one at a store. But nothing beats the thought of serving and sharing muffins with people I love and knowing that I actually made those muffins with lots and lots of TLC! Voting this hub up and useful!
